Black-Eyed Peas

Background

  • Black-eyed peas, or cowpeas, are popular in the southern United States
  • They are a popular New Year’s day food in a beans and rice dish called “Hoppin’ John”, said to bring good luck

Ingredients

  • 1 pound dried black-eyed peas (soaked and drained if desired)
  • 2 tablespoons neutral oil
  • 1 medium onion, diced
  • 4 garlic cloves, whole
  • 2 bay leaves
  • ½ teaspoon smoked salt
  • ½ teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • ¼ teaspoon red pepper flakes
  • 6 cups liquid (vegan chicken broth, vegetable broth, and/or water)

Instructions

  1. Saute the bay leaves, onions, salt, and garlic in hot oil until the onions are transparent
  2. Add spices and saute for a minute before adding broth and black-eyed peas
  3. Pressure cook for 15 minutes or cook on stove for 1-1.5 hours until soft
