Molokhia

Background

  • Molokhia (also spelled mulukhiyah or a few other ways) is not well known in the western world but is popular in the Levant, especially in Egypt
  • The dish is as old as the pharaohs and means king’s vegetable, possibly because it was once restricted to Pharaohs

Ingredients

  • 1 package frozen minced molokhia (400g or ~1 lb)
  • 2 tablespoons vegan ghee, olive oil, or neutral oil
  • 6 cloves garlic, minced
  • 1 tablespoon coriander powder
  • 1 teaspoon sweet paprika
  • 1 teaspoon cinnamon
  • 1.5 cups vegetable broth or vegan chicken broth or mix
  • Pinch baking soda (optional)

Instructions

  1. Heat a large stock pot over medium heat and melt the fat
  2. Add the minced garlic and saute for 2 minutes
  3. Add spices and saute for 30 seconds until browning and fragrant
  4. Add broth to deglaze and drop in the frozen molokhia
  5. (optional) Add baking soda if not serving immediately to retain green color
  6. Bring to a boil and then lower to a simmer for 15 minutes or until molokhia has broken up
  7. Mix and add additional broth or water as needed to thin soup to desired texture
  8. Cook for five more minute and serve or sotre
