Niter Kibbeh
Ethiopian · sauce
Background
- Niter kibbeh is a spiced ghee that is used to infuse flavor into many ethiopian dishes
- This is a vegan version made from vegan butter or a mix of oils (Trader Joe’s or Nutive vegan ghee works well)
Ingredients
- 1 pound (16 oz) vegan butter or a mix of coconut and avocado oil
- ½ medium onion (any color) coarsely chopped
- 3 cloves of garlic coarsely chopped
- 3 inch piece of ginger coarsely chopped
- 2 inch cinnamon stick
- 1 teaspoon black peppercorns
- 3 black cardamom pods OR korerima if obtainable
- 3 whole cloves
- 1 teaspoon fenugreek seeds
- 1 teaspoon coriander seeds
- 1 teaspoon cumin seeds
- 1 teaspoon dried oregano
- ½ teaspoon ground turmeric
- ¼ teaspoon ground nutmeg
- (optional) 1 tablespoon besobela
- (optional) 1 tablespoon koseret
- (optional) 1 tablespoon dried basil or 8 fresh basil leaves (in place of above two ingredients)
Instructions
- Dry roast the whole spices in a medium heat skillet for 2 minutes
- Add all of the ingredients to a saucepan and simmer at a low heat for 90 minutes
- Strain through a cheesecloth into a mason jar and store in the fridge
