Niter Kibbeh

Ethiopian · sauce

Background

  • Niter kibbeh is a spiced ghee that is used to infuse flavor into many ethiopian dishes
  • This is a vegan version made from vegan butter or a mix of oils (Trader Joe’s or Nutive vegan ghee works well)

Ingredients

  • 1 pound (16 oz) vegan butter or a mix of coconut and avocado oil
  • ½ medium onion (any color) coarsely chopped
  • 3 cloves of garlic coarsely chopped
  • 3 inch piece of ginger coarsely chopped
  • 2 inch cinnamon stick
  • 1 teaspoon black peppercorns
  • 3 black cardamom pods OR korerima if obtainable
  • 3 whole cloves
  • 1 teaspoon fenugreek seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon dried oregano
  • ½ teaspoon ground turmeric
  • ¼ teaspoon ground nutmeg
  • (optional) 1 tablespoon besobela
  • (optional) 1 tablespoon koseret
  • (optional) 1 tablespoon dried basil or 8 fresh basil leaves (in place of above two ingredients)

Instructions

  1. Dry roast the whole spices in a medium heat skillet for 2 minutes
  2. Add all of the ingredients to a saucepan and simmer at a low heat for 90 minutes
  3. Strain through a cheesecloth into a mason jar and store in the fridge
