Fresh Salsa Picada / Pico de Gallo

Background
- Salsa means sauce in Spanish and can refer to many different kinds of sauces
- In English, it typically refers to chunky tomato-onion-chili based pico de gallo
- Salsa is easy to buy but also quite easy to make and fresh salsa has a different flavor and less preservatives
Ingredients
- 15 oz can diced or chopped tomatoes (ideally fire roasted or with green chiles) - or use fresh instead
- 1 chopped jalapeño or serrano pepper (seeds removed or left in depending on desired spice)
- ½ small to medium red onion diced or roughly chopped
- Small handful cilantro (stems removed if desired)
- 1 chipotle pepper in adobo sauce (optional for chipotle flavor)
- 1.5 tablespoons lime juice (1 lime)
- ½ teaspoon chili lime salt (Tajin)
- ½ teaspoon cumin
- ¼ teaspoon ground black pepper
Instructions
- Chop up the vegetables and add to a blender (diced properly if the salsa will be chunky, roughly chopped if not)
- Add lime juice (with zest to add a bit more flavor) and spices and pulse until desired texture is reached
- Store in the fridge for at least a couple hours to allow the flavors to develop
